Raspberry Lemon Rosé Wine Popsicles

With summer in full swing, I’m trying my best to stay cool. That means that I’ve been trying to make the most use out of the popsicle molds I purchased last year. In an effort to make these treats more exciting, I have been experimenting with a few happy hour-friendly recipes. That’s where these raspberry-lemon Rosé popsicles come in. Inspired by the Frosé cocktails that are everywhere, this is another fun and refreshing way to enjoy one of the most popular drinks of the summer. Keep on reading to learn how to make these frozen treats.

Raspberry Wine Boozy Popsicles

Boozy Frozen Treats: Raspberry and Rosé Popsicles

Raspberry Lemon Rosé Popsicles

Serves 10-12

Ingredients

1 cup of raspberries

1 cup of powdered sugar

2 1/2 cups of Rosé wine

1 1/4 cups of San Pellegrino Lemon Sparkling Water

Instructions

  1. In a small pot, pour the raspberries and powdered sugar. Mix under medium heat until the raspberries and sugar dissolve into a syrup. Set the mixture aside and allow to cool.
  2. Pour the Rosé, sparkling water, and syrup in a pitcher or large mason jar. Stir and/or shake the mixture to combine all the ingredients. Then, fill each of the popsicle molds.
  3. Place the molds in the freezer for a few hours and then enjoy.

If you have any leftover mixture once you’re done pouring it into the molds, feel free to drink it!  Actually, what’s great about this recipe is that you can easily convert it into a cocktail if you’d rather not wait for the popsicles to freeze. I made the cocktail version for my friends for the 4th of July this week and it was a huge hit.
