Berry, Almond and Chocolate Overnight Oats

My goal this year is to get back on track with my health and develop/relearn better habits.  I used to be the type of person that woke up at 6 A.M. in the morning to workout and I always made time to eat a healthy breakfast. I’m not quite sure what triggered me to change that routine last year, but at some point in time I did. This change eventually took a toll on my body and, last year, I was sick more often than I had ever been before. Although I hope to eventually be able to wake up early enough to workout and eat breakfast at home, I know that I don’t have that discipline to do that right now.  One of the changes that has helped me get back on track–at least when it comes to eating breakfast in the morning–is preparing breakfast that I can take with me to work. Overnight oats have been a great addition to my diet because they make for an easy and delicious on-the-go breakfast, and I like that it’s easy to experiment with different ingredients and proportions. Today I’m sharing one of my favorite overnight oats combinations:

Berry, Almond and Chocolate Overnight Oats
    Ingredients
    3/4 cup of dried oats
1/2-3/4 cup of mixed berries (I used blueberries, blackberries and raspberries)
    A handful of sliced almonds
    A handful of chocolate chips
1/2 cup to 3/4 cups of almond milk
1 Tbsp of agave syrup (optional)
To prepare this overnight oats recipe, simply pour all the dry ingredients into a half-pint mason jar, top off the jar with almond milk and agave syrup, and then store the mixture in the fridge overnight. Then simply grab the mason jar from the fridge on your way out the door in the morning. I really wasn’t kidding when I said this is an easy breakfast to prepare! You can enjoy overnight oats warm or at room temperature, but I like to eat this particular recipe when it’s cold. You don’t want the berries to get too pruny by popping them in the microwave.
I hope that you enjoy this recipe. Now that I have a bit more time, I’m going really make an effort to include more recipe and DIY posts. Please let me know if there is anything in particular that you would like to see on the blog. As always, thank you for reading and have an amazing rest of the week!
    xoxo,
    Helen

    Weekend Links

    Photo from my Instagram
TGIF! This week has been incredibly slow and I’m ready to enjoy the weekend. Actually, the reason that I’m so tired is because I’ve been having too much fun this week. I went to see the band We Are Scientists on Wednesday evening, and didn’t get much sleep before I went back to work the next day. That completely threw off my sleep schedule, and I’ve been trying to recover from lack of sleep all week. I think it’s needless to say that I’m really looking forward to getting some rest and relaxation in this weekend!  However, in between naps, I am also making time to finally go see the Hello Kitty Exhibition at JANM, so I’m excited to report on that next week. Until then, enjoy these links:
-I’m all about self-care and self-love these days, and reading articles on these subjects has helped me become better about incorporating both into my life. These are a few articles that I enjoyed reading this week: 5 Steps to Overcoming A Major Setback, 5 Mantras to Comfort You When You’re Feeling Lonely, and Seriously, Let’s End The War With Our Bodies.
-Speaking of self-care, I’ve found that yoga and meditation are extremely helpful when it comes to managing anxiety.  Can’t afford a membership at a yoga studio? Don’t worry about that because I’ve got you covered! Youtube has plenty of awesome Yoga channels and this is my current favorite.
    – I’ve decided that next year I’m definitely going to throw a Galentine’s Day Party! This week I’ve been reminded of how incredible all my girlfriends are, and I think having a day to celebrate our friendship is a great idea. If you’re into the idea, Paper & Stitch has the cutest post on how to throw your own.
-I’m not much of a drinker, but this Blood Orange Rosemary Gin Cocktail sounds yummy!

    Phyllo Dough Flat Bread

Today I’m sharing with you one of my go-to recipes: phyllo dough flat bread. I started making flat bread when I first moved out on my own and I needed to prepare meals that were fast and easy, and that could serve as leftovers for work. The great thing about this recipe is that it’s really easy to make. You can even prepare it in advance and just pop it in the oven right before mealtime. It can also serve as an appetizer at your next party. Although you can pick any of your favorite toppings to put on your flat bread, I am suggesting some of my favorite combinations in this post. One of my favorite appetizers is bacon-wrapped dates, so it only seemed natural to use those two ingredients as a topping in one of these flatbread recipes. I also love Greek salads, so I decided to combine some of the ingredients in my second flat bread. But as I said, the possibilities are endless. This recipe is also great with a side salad if you’re worried about getting in your daily serving of veggies. I know that I’m definitely trying to pay more attention to that these days. Haha!

    PHYLLO DOUGH FLAT BREAD RECIPE
(Each flat bread makes 4-6 servings)
    INGREDIENTS FOR CRUST:
    (Makes 1 crust)
    10-12 Phyllo dough sheets
    1/2 cup of Olive Oil
1/2 cup of Pasta Sauce (I used Trader Joe’s Organic Marinara)
GOAT CHEESE, DATE AND BACON FLAT BREAD
    TOPPINGS:
    8 oz herbed goat cheese
    3-5 chopped dates
    1 cup of chopped bacon
    Sliced onions (to taste)
FETA CHEESE AND OLIVE FLAT BREAD
    TOPPINGS:
1 and 1/2 cups of crumbled Feta cheese
    1/2 cup of chopped basil
    1 cup of chopped tomatoes
1 cup of chopped Kalamata olives
    Sliced onions (to taste)
Start by preheating your oven to 375 degrees Fahrenheit. Next, lay down a baking sheet or piece of aluminum on a tray, and lightly grease it with olive oil to ensure that the phyllo dough sheets don’t stick. To make your crust, start off by laying down a phyllo dough sheet over the aluminum or baking sheet. Use a brush or a paper napkin to rub olive oil over the sheet before you lay down the next, and repeat this until you’ve laid down all 10-12 sheets. Once you have your crust, spread a thin layer of marinara sauce over it, and then evenly spread your toppings over the crust. Finally, bake the flat breads for 45-50 minutes and serve.

    ——–
I hope that you all had a great weekend. I spent most of mine in my loungewear, baking and studying. I don’t think that I have to say that my weekend wasn’t too exciting! I’m just trying to get through this month, take the GRE, and then have time to enjoy the holidays.
Also, I’m sorry if I have been slow responding to comments. Your opinions and questions are very valuable to me! As I’ve mentioned a few times, I’m trying to take a step back from blogging for a while, in order to make time for studying and self-care. However, I don’t want to completely ignore this blog since I really enjoy working on it and interacting with all of you. Nevertheless, I should be able to be more active here by the end of the month, once I’ve taken the GRE.
    xoxo,
